Bison has little to no marbling. It is a naturally lean and dense meat.
Therefore, bison will cook faster and will continue to cook after it is removed from the heat source.
Ground Bison should be cooked to an internal temperature of 160° F, until the juices run clear.
Roasts and steaks should be cooked to an internal temperature of 145° F (med-rare) to
160°F (medium). Bison steaks are best served rare -medium, to maintain the best flavour, tenderness and moisture.
